Here we are! Already in September. Nature has exploded with abundance this year and the balance of sun and rain has provided optimal growing conditions. This month, I am sharing a recipe that was given to me by my friend, Angela, and it is definitely one of my new favourites! I love both coconut and bananas, so when she was describing it, she had my attention right away. I call Sharyn’s Pantry an Imagination Station because we are always brainstorming and discussing food combinations that would complement each other. Flavour is the key for sure.
All of the items required for this bread are available at Sharyn’s Pantry except for the ripe bananas. This bread takes approximately ten minutes to make and cooks for 40-50 minutes. Remember to test the bread before removing it from the oven to make sure it is fully cooked. This Coconut Banana Bread would make a great lunch snack with a protein filled nut butter on top for the children’s lunches. Simple and easy!

Coconut Banana Bread (Gluten Free)

Ingredients
- 3 very ripe bananas
- ¾ cup coconut flour
- 5 large eggs
- ⅓ cup coconut sugar
- 1-2 teaspoon ground cinnamon
- 2 teaspoons baking powder
- ¼ teaspoon fine sea salt
- 1 teaspoon Sharyn’s Pantry Madagascar vanilla extract
- chopped walnuts or chocolate chips (optional)
Instructions
- Preheat the oven to 350ºF and line a 9-inch by 5-inch loaf pan with parchment paper.
- In a large bowl, mash the bananas with a fork. Add the coconut flour, eggs, coconut sugar, cinnamon, baking powder, salt, and vanilla. Use a whisk to stir the batter well until it is smooth.
- Pour the batter into the lined loaf pan and sprinkle walnuts or chocolate chips on top, if desired. Bake until the center of the loaf has risen and starts to crack. It will feel firm to the touch (about 45 to 50 minutes). Cool completely before slicing and serving.
- Store this moist loaf in an airtight container in the fridge for the best shelf life. It should last up to 5 days when stored in the fridge, if it lasts that long!
